Chicken and Waffles with Smoked Apple Bacon Aioli


Last night I wanted to try something new. I never had Chicken and waffles but I didn't want to fry the chicken up like so many recipes requested, so I marinated chicken tenders in a sweet teriyaki sauce for a few hours and grilled them up with apple wood. For the waffles I kept it basic and simple for this round. I did get a little creative with the sauce. I took a pacific rose apple and smoked it on the grill for about 15 minutes. It came out a nice golden brown color and have an awesome flavor. All the other ingredients for this sandwich are straight forward.

Going To Need:

2lbs     Chicken
2 cp     Teriyaki Marinaded I used KC Masterpiece Honey Teriyaki
1/2       Apple - I used a Pacific Rose
1lbs     Bacon - maybe more to eat as you go
2 cp     Mayo
1          Heart of Romaine
2         Tomatoes
1         Avocado
1 cp    Apple wood chips or chunks
3 lbs   Natural Charcoal Chunks

Enough Waffle Batter to make a couple of waffles. Hungry Jack's works good.

How To Get It Done:

  • Combine the Chicken and Teriyaki Marinade in a plastic bag and let it sit in the refrigerator for a least an hour or overnight.
  • Fire up the grill with the 1/2 the Natural Charcoal Chunks and get the temp to medium heat. Add 1/2 the wood chunks or chips. (if using chips soak them in water for 15-20 minutes before using). Once you go a nice smoke going move the coals over to one side and add the apple to the other side. Put the lid on and let the magic happen for 15 to 20 minutes. You don't want the apple to become mushy, but you do want a good smoke flavor. Remove the apple and let cool down.
  • While the apple is cooling spread the coals over the whole bottom of the BBQ and add the rest of the coal and wood chips or chunks. Let the temp heat back up and get a nice smoke going.
  • Add the chicken and let it cook on a medium heat.
  • While the chicken is cooking, put the bacon in a cast iron pan and cook it off. Once the bacon is done set it aside and take two strips into the house and add it to a blender (let the bacon cool) with the mayo and smoked apple. Blend it up. If the ailoi sauce is to watery add more mayo to thicken it up.
  • Heat up the Waffle Iron and start making waffles. Be sure to check the chicken during this process.
  • Once the chicken is done remove and set aside and let it rest.
  • Cut up the produce for the sandwiches.

Put It All Together:


  • Cut the waffles into 4's and spread the smoked apple aioli sauce on both sides.
  • Add one or two slices of tomatoes, avocados, and Lettuce.
  • Pop one or two of the Chicken Tenders on top and then the waffle top. 
  • Eat and enjoy. - Post us a picture of your creation.
