Pork Roast with Apples |
Buying a whole pork tenderloin is one of the best ways to save money and feed the family on budget. Plus you can make the meat as thin or thick as you want. I cooked this up for my family the other night. You can use your own rub of choice but I used the Big Tex Rebel Rub from the Moonshine Bandits. You can buy it here Moonshinebandits.com
This recipe can be made ahead of time for an easy weeknight meal with the family.
Serves 6-8
Going to Need:
2 lbs Pork Tenderloin
2 Onions
2 Apples
1/2 cp White Grape Juice
2 tbs Apple Cider Vinegar
1 tbs Dijon Mustard
1 oz of The Big Tex Rebel Rub or Rub on of Choice

How to Make it Happen
- Preheat Oven 350F.
- Lightly Grease a roasting pan with pork fat or oil. Rub down the pork roast with the Big Tex Rebel Rub or the rub of choice. Place in the pan.
- Cut and arrange onions and apples around the meat and set to the side.
- In a mixing bowl, combine grape juice, apple cider vinegar and mustard. Whisk and pour over meat.
- Cover with foil and roast for 1 hour.
- Remove foil and put back in the over for 20 minutes, basting every 5 minutes with juices for the pan.
- Once the internal temperature reaches 145F remove from oven and let rest for 10 minutes.
- Cut and service with steamed vegetables or backed potato.
