Zucchini Spaghetti with Pork Rib Sauce

Trying to eat better I have been researching Ketogenic meals. I first heard about them while watching a Joe Rogan podcast. It sounded like the perfect way to eat for me. I smoke a lot of meat and always vegetables in the refrigerator. After a few weeks of gathering ingredients I am ready to start my journey into eating a pure Ketogenic Diet.

 I hope to lose about 40 pounds in the next 4 to 5 months with this diet and exercise. I'll be posting most of the recipes I eat to keep you up to date on whats going on. For this recipe I used up some extra rib meat I had to make a sauce. The wife and kids loved it. 

Seasoned Rib Meat
Rib Meat for Spaghetti Sauce
Zucchini Pork Spaghetti

Ingredients:
8oz                         Pork (Chopped)
4                              Zucchini Squash
1                              Onion
3                              Celery Stocks
1tbs                       Fresh Ginger (Chopped)
3                              Garlic Cloves Minced
2tbs                       KnorrTomato Bouillon w/ Chicken Flavor
14.5oz                   Can of Dice Tomato
2tbs                       Extra Virgin Olive Oil
                                Juice of one lime.

Pork Rub:
1tbs                       Turmeric
3tbs                       Black Pepper
1tbs                       Sea Salt
2tbs                       Onion Granules
2tbs                       Garlic Granules
1tsp                       WorcestershirePowder
¼ Cup                    McCormickGrill Mates Vegetable Seasoning


To Make:

1.       Finely chopped pork and mix with rub and let marinade for one hour.
2.       Chopped Onions and Celery into small pieces.
3.       Boil 3 cups of water and dissolve Knorr Tomato Bouillon w/ Chicken Flavor a set to the side.
4.       Heat up medium pot with olive oil and add onions. Cook onions to a dark golden color.
5.       Add garlic, turmeric and celery and cook for 2 minutes. Remove and set to the side.
6.       Add Pork to the same pot and brown the meat.  
7.       Add Garlic mixture, dices tomatoes and lime juice. Heat it all up
8.       Add Tomato water and bring to a boil.
9.       Reduce heat a let simmer uncovered until sauce is thick.
1.   Cut or slice up Zucchini into long strains or match sticks. Place in bowl and top with sauce.

Add Cheese to make it perfect.
