A few weeks ago I was buying a whole chicken and wanted to try a new rub. At our local market in Grass Valley,CA, SPD has a nice section with local products. One of the those was the Mad Man's Spice Company Original Blend. The logo has a crazing looking firefighter with a nice story on the bottle about Bob Madsen, the creator, spending over 20 years to create this blend. It say's this a big dream for him and his family. You know me, I'm all about helping folks follow their dreams.
Once home I cleaned up the chicken and covered it with a vinegar, salt, brown sugar, and water brine for about two hours. It was removed dried and the Mad Man's Original Blend was rubbed inside and out. Like most of our rubs we let the chicken rest for one hour. While the rub was setting into the chicken meat, I got my Weber Smokey Mountain all ready. On this one we are using a Apple Wood and Charcoal Chunk mixture for the heat and added flavor.
The temp got to 250 and the chicken was added to the smoker with a handful of Apple Wood Chips. I added wood chips every 30 minutes for the first two hours. This was a four hour smoking. Once the chicken was at a internal temp of 165 degrees it was removed and set to rest for 15 minutes, then sliced up and ready to eat.
The first bite was perfect. The blend of Parsley, garlic, and pepper was perfect. It reminds me of a few other of my favorites with a little added twist of sweet salty goodness. It worked perfectly with the Apple Wood Smokey flavor. The Parsley was a big part of the flavoring and why I like it. After a few bites my tongue was almost tingling. Not sure why that was but it added to the experience.The fact that this blend has a nice pepper background to it without being over the top like so many on the blends I have been getting lately was a nice relief. The Garlic and Parsley mix works very well.
Mad Man's Original Blend is loaded with a nice mellow flavor that would work good on most meats, eggs, potatoes, and vegetables. I know because since I bought my first bottle I have bought 4 more and have been putting it on everything and it works. Overall this rub passed the chicken test and is a big hit for me and my family. Highly Recommended.
