Ingredients:
16oz Black-eyed
peas
1tbs Olive
Oil
4oz Green
Chilies
½tbs Franks
Red Hot
2tbs Minced
Onions
2tbs Minced
Celery
4oz Sweet
Corn
2tbs Apple
Cider Vinegar
¼ tsp Salt
1tbs Minced
Cilantro
8oz Tomatoes,
seeded and diced
Yield: 4 servings
Cooking Method: Wet
Procedure:
1.
Grill sweet corn in husk until tender. Remove from husk and cut corn
from cob. Let cool.
2.
Combine olive oil, cayenne pepper, onion, celery, vinegar, salt, pepper
and corn.
3.
Pour olive mixture over black eyed peas and mix together
4.
Refrigerate overnight
5.
At serves mix tomatoes and cilantro into mix.
