For the Bird
1          Whole Chicken (5lbs)
4 tbs    Butter or Pork Lard

Mop Recipe

1          Stout beer
1 tsp    Thyme
1 tsp    Garlic

The Chicken

  1. Clean the chicken under running water and remove the neck and anything else the might be inside the body.
  2. Mix the butter and Rebel Rub together in a bowl and set aside.
  3. Mix the Mop Recipe using only ¼ bottle of beer, drink the rest and put the mop bowel aside.
  4. Either with your fingers or with a couple of spoons loosen the skin from the meat of the chicken. Rub the butter rub mix all over the meat.
  5. Truss the Chicken (tying the legs & wings against the body to make a compact, solid unit). This insures the chicken will smoke up evenly.

The Smoker

  1. Get the smoker up to 225-250 with your wood flavor of choice. I use apple wood and hickory natural wood chuck charcoal this one.
  2. Place the chicken on the middle shelve and let the smoker do its job. It’s going to take about 4 hours to smoke a 5 pouder. Mop the chicken every 30 to 40 minutes. About half way flip the chicken upside down for an hour and then put back on its bottom.
  3. Chicken needs to get up to 165 degrees to be safe to eat but when your smoking a bird you need to get it up to 185 degrees. For 5lbs of chicken I smoke for about 4 hours, but use a thermometer make sure the bird is at 185. Don’t mess with raw chicken it makes for a bad couple day.
