Turn Left Over Pulled Pork into a Fresh Dish |
A fun way to take left over Pulled Pork, Brisket or Pork
Chops and turn them into a fresh new dish. I used pulled pork and pork chops
for this recipe. This is a fun dish for parties too.
Yield: 6 Servings
1 tbsp Kosher Salt

4 Green Onions Sliced
|
1 lbs. Package thick rice noodles
|
¼ Cup Fresh Cilantro
Leaves

8 oz. Sliced Baby Bella
Mushrooms
|
6 Cup Chicken Broth
|
2 tsp. Olive Oil
|
1 tbsp. Picked Ginger
with juice
|
2 Cup Smoked Pork Butt
(without sauce)
|
4 Limes
|
1 lbs. Angel Hair Coleslaw
Mix
¼ Cup Italian Pecorino
Romano Cheese
|
Topping: Soy Sauce, Diced Crushed Red Peppers, Chopped dry-roasted
peanuts.

Bowl 8 cups of water and kosher salt Pour into a
deep dish and add Rice noodles. Let soak for 20 to 30 minutes to soften up. Divide
up into 6 bowls for serving.

Sauté mushrooms in hot oil in a medium skillet
over medium-high heat for 5 minutes. Put over noodles. Add pork to skillet, and
reheat, stirring occasionally until hot, add to bowls. Add coleslaw to pan and
stir until soft, add to the bowls.

Bring broth, ginger slices and a teaspoon of
ginger juice to a boil. Remove from heat and divide among bowls. Slice cheese
over dish, serve with lime wedges and desired toppings.
