Healthy Barbecue

You know me, all about the meat and potatoes, but greens are always welcome. I like to grill up everything: squash,  corn, asparagus, and everything else from the garden. The smoke just gives everything such a wonderful taste. Recently I've been challenged to come up with some healthy barbecue options, and didn't know barbecue was unhealthy. I started to think about it and I still don't think Barbecue is unhealthy. You just can't eat Tri-Tip and Brisket for every meal. Chicken, pork and vegetables are a good mix from time to time. Cooking on an open flame is the oldest form of cooking in the world and its got to one of the healthiest. Just because the dude doing the cooking is not slim doesn't mean it unhealthy.
